

Founded in Wisconsin by four generations of master cheesemakers, Sartori has developed a distinctive approach to cheese, blending Italian heritage with a strong spirit of innovation.
One of its signature cheeses, BellaVitano Espresso, perfectly illustrates this expertise. After twelve months of aging, the wheel is hand rubbed with freshly roasted coffee beans, allowing the aromas to infuse gradually into the rind. The result is a subtle balance between a smooth, slightly crystalline texture and the depth of roasted notes, delivering a truly distinctive tasting experience.
This iconic creation has led to the development of a wider range of cheeses with varied aromatic profiles, each crafted with precision to reveal subtle and distinctive combinations.
Alongside this range, Sartori also offers a selection of rich, well structured cheddars, developed with the same high standards and designed to integrate easily into a variety of consumption settings.



The Sartori Story
In 1939, Paolo Sartori arrived in the United States aboard the Finlandia, the ship that brought him to a new life.
He settled in Antigo, Wisconsin, a region renowned for its dairy heritage, where he set out to create his own cheeses while remaining true to Italian artisanal traditions.
His first creation was BellaVitano Gold, which later inspired a range of distinctive variations including Raspberry, Merlot and Espresso. Today, Sartori remains a family run business, with the fourth generation continuing this legacy with the same passion for crafting exceptional cheeses.
Sartori’s philosophy is built on full control from farm to table. To achieve this, the company has developed close relationships with local farms, establishing strict standards for animal care, milk production and collection.
Sartori’s master cheesemakers then bring their expertise to transform this rich milk into authentic cheeses with unique flavour profiles, while respecting traditional methods and the environment.
